A hearty loaf of sourdough. Jars on jars of sauerkraut and pickled vegetables. Beer, and cider, and wine. 

Fermented foods have a long history in northern climates, by helping us stay healthy and well-nourished through long winters when very little fresh produce is available. And for seasonal Chefs, it’s a very interesting time of year.

Join us in ushering in the spring season with a refined-fermented dinner crafted by our incredible Catering Chef, Dimitri Bakalos, who has been gracing Start Fresh catered events all winter long with his beautiful ferments. 

Inspired by the bread making of his early culinary school days, Dimitri has been a long time experimenter of this traditional craft — making his own kimchi, krauts, beers, ciders, cheeses, and amazing doughs. His strong belief in the value of flavour development and added nutrition that fermenting provides, is where he sees food education moving, and we simply cannot wait for this feast!
